Nectarine Ginger Gelato
Ingredients:
1 13.66 oz. can of coconut milk
5 ripe nectarines
1 ½ tbsp. grated ginger (microplane grater)
4 tbsp. organic agave
¼ tsp. Himalayan sea salt
1 tsp. ground cinnamon
Directions:
Cut the nectarines into slices, leaving the skin on. Remove the pit. Place the nectarines, coconut milk, grated ginger, agave, salt, and cinnamon into a Vitamix. Blend it until evenly mixed. Take a Popsicle mold with 10 Popsicle molds. Pour the mixture into the molds and freeze overnight. When removing the gelato from the molds, place the molds under hot water for a few seconds. The gelato will pop right out. Note: The gelato can be poured into any mold that you choose.
Will last in the freezer for up to 1 month.
