This is the creation of the day! As you can see, the stone grinder is covered in coconut flakes. The finished Coconut Butter Candy is smooth and just melts in your mouth, quickly covering your taste buds with buttery luscious coconut. All raw, organic and naturally sweetened, these make a fun way to fill that candy craving.

Coconut Butter Candy

Ingredients:

2 bags of 7oz. organic unsweetened coconut flakes

Directions:
Place the coconut into a high speed blender with a dry blade and turn the coconut into flour. Turn on a stone grinder and slowly pour the flour into the grinder as it is running. Scrape down the sides periodically. Let it grind for 30 to 40 minutes until it turns to creamy coconut butter. Pour it into candy molds and place in the refrigerator for 30 minutes. Remove from the refrigerator and pop the candies out of the mold and enjoy!
Note; If you don’t have a stone grinder, place the flakes into a cuisinart with an S blade, mix until the coconut turns into butter, scraping down the sides as you go along.
