Mediterranean Vegetable Melody

Ingredients:

3 cups organic vegetable broth
1 small shallot
1 garlic clove
¼ cup fresh lemon basil
¼ cup savory herb
1 tbsp. olive oil
1 28 oz. can of diced tomatoes
3 large organic carrots of many colors
5 medium mushrooms
1 cup kale
4 Brussel sprouts
1 cup red and green cabbage
½ tbsp. Mediterranean blend seasoning

Preparation:
Make sure to wash and rinse all the produce.
Dice the shallot and the garlic into very small pieces. Chop the Savory and lemon basil into small pieces. Peel and cut the carrots into medium pieces. Slice the mushrooms. Cut the kale into small pieces. Slice the Brussel sprouts. Cut the green and red cabbage into medium pieces.

Directions:
Place the vegetable broth into a large soup pan. Add tomatoes, savory, basil, carrots, mushrooms, kale, Brussel sprouts, and the Mediterranean spice. Bring the pan to a boil and reduce the heat to low. Take a small sauté pan, heat the olive oil in it. Add the garlic and shallot to the pan and sauté until lightly browned. Add the sautéed mixture to the soup pan. Let the soup simmer on low for 15 minutes.

Garbanzo Bean Garnish

Ingredients:
1 15oz. can of Garbanzo beans
2 tbsp. olive oil
1 tsp. Mediterranean seasoning
1 tbsp. nutritional yeast
¼ tsp. Himalayan sea salt
¼ tsp. onion powder
¼ tsp. garlic powder

Directions:
Place 1 tbsp. of olive oil into a large sauté pan and set aside. Drain and rinse the garbanzo beans. Place the garbanzo beans into a medium sized bowl. Take the other tbsp. of olive oil and drizzle it on top of the beans. Add all of the remaining ingredients and mix until evenly distributed. Remove the mixture from the bowl, making sure to scrape the sides of the bowl clean with a spatula. Place into a sauté pan. Sauté on medium heat until golden brown. Take the soup and place it into a bowl and top with the garbanzo beans.
