Smoky Lentil Stew

Ingredients:

1 cup soaked and rinsed lentils
2 ½ cups organic vegetable broth
¾ cup diced sweet onion
1 tbsp. chopped garlic
2 tbsp. olive oil
¼ tsp. Himalayan sea salt
2 tsp. smoked paprika
2 cups sliced zucchini using a mandolin
3 tbsp. maple syrup
2 cups chopped crimini mushrooms
1 12oz. canned organic peeled plum tomatoes
1 cup julienne sliced basil
1 tbsp. lemon juice

Directions:
Place 1 tbsp. olive oil in a frying pan. Turn the heat to medium. Add the sweet onions and garlic. Saute until lightly browned. Place all of the ingredients in a large soup pot. Bring the mixture to a boil. Reduce the heat and simmer for 45 to 60 minutes. Please note that the lentils must be cooked to your taste.

Serves 6 to 8 people.
