Tropical Deliciousness

Dressing Ingredients:
1 cup fresh mango
1 chopped habanero pepper
1/8 tsp. Himalayan sea salt
1 tbsp. lime juice
2 tbsp. agave
¼ cup olive oil

Directions:
Place all of the ingredients in a high speed blender. Blend until creamy smooth and set aside.

Salad Ingredients:
4 cups baby organic arugula
1 mango cubed
1 cup chopped cilantro (remove the stems)
1 avocado cut into square pieces
1 cup chopped red onion
¼ cup coconut butter (broken into small pieces)
¼ cup sprouted buckwheat groats

Assembly:
Place arugula, cilantro, avocado, red onion, and mango in a large bowl. Gently toss. Pour ¾ of the dressing into the bowl and toss until evenly mixed. Add the coconut butter and buckwheat groats into the bowl. Toss until evenly mixed.

Serve immediately. This recipe has no shelf life.
