Tofu Douce
Ingredients:
14 oz. extra firm organic tofu
¼ cup olive oil
¼ cup maple syrup
2 tbsp. apple cider vinegar
½ tsp. garlic powder
½ tsp. onion powder
1 tsp. smoked paprika
1/8 tsp. pepper
1 cup chopped spinach
2 large sweet potatoes
1 bunch asparagus
1 cup chopped walnuts
Directions:
Remove the tofu from the package. Place the tofu between several pieces of paper towel and press down until all of the water is squeezed out of the tofu. It will become crumbly. Place the tofu into a large sauté pan. Set aside. Place the olive oil, syrup, vinegar, garlic, onion, paprika, and pepper into a measuring cup and whisk together. Pour the mixture over the tofu in the pan and simmer for 10 minutes. Add the spinach and simmer for 5 more minutes. The spinach will wilt and the sauce will evaporate. While sautéing the tofu, peel and cube the sweet potato. Rinse the asparagus and cut off the ends. Steam the asparagus al dente. Steam the sweet potatoes until done but not mushy. Chop the walnuts into small pieces. Add the sweet potatoes and the asparagus to the tofu and gently toss the mix in a large bowl.
