Southwestern Salsa Salad
Ingredients:
2 Cups Organic Corn (fresh or frozen).
6 Green Onions
1 Cup Cherry Tomatoes.
1 Tbsp. Lime Juice
1 Cup Cilantro.
½ Tsp. Onion Powder
1/8 Tsp. Salt
2 Tbsp. Jalapenos
1 Tsp. Smoked Paprika
1 Tsp. Red Pepper
¾ Cup Coconut Yogurt
Directions:
Cut the Cherry Tomatoes into slices.
Slice the Green Onions finely. Remove the seeds from the Jalapenos before chopping finely. Remove the stems from the Cilantro. Chop the leaves slightly. Combine corn, green onions, sliced cherry tomatoes, lime juice, cilantro and jalapenos. Hand mix. Add onion powder, salt, paprika, and red pepper to the mixture and stir gently until evenly distributed. Once all the ingredients are mixed evenly, add ¾ cup vegan coconut yogurt. Mix and serve.
