Pomegranate Pastiche
Dressing Ingredients:
¼ tsp. finely chopped garlic
¼ tsp. finely chopped red onion
1/8 tsp. Himalayan sea salt
½ tsp. finely grated ginger
¼ cup olive oil
1 ½ tbsp.. balsamic vinegar
2 tbsp. agave
Directions:
Whisk all the ingredients together in a bowl and set aside.
Salad Ingredients:
1 cucumber
1 ripe pomegranate
1 tbsp. shredded coconut
2 tbsp. pine nuts
1 whole avocado diced
6 cups arugula
Directions:
Remove the skin from the cucumber. Julienne the cucumber. Remove the seeds from the pomegranate and place 1 cup of seeds aside. Dice the avocado into medium sized pieces. Place the ingredients into a bowl and hand mix. Pour the dressing on the salad and serve.
