Marinated Red Onion

Ingredients:
2 cups diced red onions
½ cup olive oil
½ cup balsamic vinegar
½ cup agave

Directions:
Place the olive oil, vinegar, and agave into a bowl and whisk until evenly blended. Then place the onions into an air tight container. Pour the marinade sauce over the onions. Cover and refrigerate for 3 to 4 hours. Strain the onions and place onto a dehydrator tray with a teflex sheet. Note: Save the marinade sauce and use it in other recipes. Dehydrate at 115 degrees for 8 hours. After 4 hours, remove from the dehydrator and move the onions around with a spoon so that they will continue to dehydrate evenly. Place back into the dehydrator and finish the remaining four hours. Remove them from the dehydrator.
Makes 1 cup of garnish.
Store in the refrigerator I an air tight container for 6 to 7 days.
