Dill Fromage

Ingredients:
2 cups organic cashews
¼ cup fresh organic lemon juice
¼ cup fresh dill
4 tbsp. finely chopped shallots
¼ cup balsamic vinegar
1 tbsp. spicy brown mustard
1 cup organic agave
1 cup filtered water
¼ tsp. black pepper
1/8 tsp. pink Himalayan salt
½ tsp. ginger powder
¼ tsp. garlic powder
¼ tsp. turmeric powder

Directions:
Soak the cashews in 2 cups water for at least 2 hours. Drain the cashews. Marinate the shallots in the balsamic vinegar. Remove the stems from the dill. Finely chop the dill and set it aside. Place the cashews, lemon juice, agave, mustard, pepper, salt, ginger, garlic, turmeric, and water into a Vitamix. Blend on high until silky smooth. Take a tablespoon of the shallots, a tablespoon of the vinegar that the shallots were soaking in, and place them into the Vitamix. Blend them in until creamy smooth. Take a tablespoon of the chopped dill and blend it in until evenly mixed. Remove the fromage from the Vitamix and place it into a bowl. Take the remaining dill and stir it into the fromage by hand.

Note: The remaining shallots and balsamic vinegar should be saved for future use. This fromage is very versatile and can be used with many different dishes. You will need to use these for garnish.
