Breakfast Sundae​

Coconut Cream Layer Ingredients:
2 cups Thai young coconut meat
¼ cup agave
1 tbsp. lemon juice
¼ tsp. Himalayan sea salt
½ tsp. vanilla extract
2 tbsp. melted coconut oil

Directions:
Place coconut meat, salt, agave, lemon juice, and vanilla into a high speed blender. Blend until creamy smooth. Turn the blender onto low, slowly add in coconut oil and blend until incorporated evenly. Remove from the blender and place into an air tight container. Place into the refrigerator for 3 to 4 hours.

Blueberry Layer Ingredients:
1 ½ cup blueberries
20 pitted medium sized dates
2 tbsp. filtered water
½ tsp. vanilla extract
½ tsp. Himalayan sea salt
1 tsp. lemon juice
10 drops medicine flower blueberry extract
¼ cup dehydrated sprouted buckwheat groats

Directions:
Set aside ½ cup of the blueberries. Place 1 cup blueberries, dates, water, vanilla, salt, lemon juice, and the medicine flower extract into a high speed blender. Blend until creamy smooth. Set aside. Pour into an air tight container and place into the refrigerator for 3 hours. Remove from the refrigerator.

Assembly:
Take two pastry bags using a 1M tip and a 2A tip respectively. Fill the bag with the 1M tip with coconut cream. Fill the other bag with the blueberry jelly. In a beautiful wine glass, place big coconut cream florets to make the bottom layer. Take the blueberry jelly and make large round dots on top of the cream layer florets to make another layer. Next, line the outside edge of the glass with whole blueberries. Sprinkle with buckwheat groats. Take the coconut cream bag again and make another layer of florets. Take the blueberry jelly bag and make another circle of large round dots around the outside of the glass only. Fill the center with a huge floret of coconut cream. Rim the outside edge of the glass with whole blueberries. Sprinkle with buckwheat groats. Place one whole blueberry in the top center of the sundae.

Will last for 3 to 4 days in the refrigerator. Make sure to cover carefully in order to preserve the decorations.

Hi energy foods are always welcome at the beginning of a busy day.

I created the supreme “feel good” breakfast for myself the other day. I knew my day would be busy and strenuous physically. I wanted to ride my bike and had a lot to accomplish after that. When I don’t have time to eat during the day, I want to start the day with something nourishing and satisfying. Feeling good and full of energy is first on my list of priorities.

Blueberries came to mind when I recalled the fact that the indigenous people living in the subarctic regions of the North American continent consumed them to stay healthy. Curiosity got the better of me and I had to find out why they thrived on these berries. Turns out that blueberries are packed with vitamins, minerals, and antioxidants. They even have lutein in them. Who could ask for more? Mother nature’s multivitamins lie in these tasty treats.

Coconut would give me the energy I wanted to get through the day. The flavor also paired perfectly with the blueberries. I added some crunchiness to the texture with buckwheat groats.
