Blueberry Frosting
Ingredients:
1 cup soaked cashews for 4 to 6 hours in filtered water
¾ cup Thai coconut milk
1 cup frozen blueberries thawed with juice
¼ cup agave
¼ tsp. lemon juice
¼ tsp. Himalayan sea salt
10 drops blueberry medicine flower extract
½ cup melted coconut oil
2 tbsp. lecithin granules ground to powder
Directions:
Drain the cashews and place them into a Vitamix. Add the coconut milk, blueberries with juice, agave, lemon juice, salt, and medicine flower extract into the Vitamix. Blend until creamy smooth. Make sure the blend is as smooth as silk. Turn the blender on low and slowly pour in the coconut oil and lecithin. Blend until evenly distributed.
Note: This is a spread as well as a frosting. It can be used in many different recipes.
Yields 2 cups
Will last 3-4 days in refrigerator, and 1 month in freezer. I like to freeze it in smaller portions to be used in other recipes.
