Kelly’s Special Spaghetti is very flavorful and fun.
It is extremely simple to make and captures that great Italian goodness that embodies this unique creation.
Kelly’s Special Spaghetti
Ingredients:
1 1/4 cup Kelly’s sun dried tomatoes
2 large zucchini
1 cup filtered water
Directions:
Take 1 cup of Kelly’s sun dried tomatoes and place them into a bowl. Add 1 cup filtered water and soak them for 1 hour. Set aside ¼ cup of Kelly’s sun dried tomatoes. Take a spiral slicer and spiral the 2 zucchini. Set aside. Place the sun dried tomatoes, along with the water that they have been soaking in, into a high speed blender and blend for ½ minute. Place the spiraled zucchini into a pyrex bowl and pour the marinara sauce on top. Gently hand mix until all the zucchini is coated. Place the pyrex bowl on a tray in the middle of a dehydrator at 115 degrees for 4 hours. Select two decorative plates and place a round food mold in the center of each plate. The food molds should measure 2.75” in diameter by 2.1” high.
Once finished dehydrating, place the spaghetti into the food molds. Tamp the spaghetti down with a fitted press to mold it on the plate. Remove the molds by pulling them gently up. Take ¼ cup Kelly’s sun dried tomatoes and decoratively drizzle them around the outside of each spaghetti tower. Put the finishing touches on the dish with a few tomatoes sprinkled on the top of each. Refer to the photo for assembly.
