Mini Apple Rings

Ingredients:
1 cup packed medium sized pitted dates
½ cup filtered water
1 cup chopped almonds
1 tsp. cinnamon powder
¼ tsp. Himalayan sea salt
6 medium sized Gala apples
½ cup coconut flakes

Directions:
Place the dates and the water in a measuring cup. Pack them down and soak them for ½ hour. Wash the apples. Take an apple potato peeler and slice the apple rings. The apple will come out of the peeler in one big spiral slice. Cut the slice to form rings. You will end up with 40 of those. Place the water and dates into a Vitamix. Blend until you have a creamy smooth date paste. Add the cinnamon and salt into the mix. Blend until even. Remove the mixture from the Vita Mix and place it into a medium sized bowl. Pour the chopped almonds into the bowl and mix in with a spoon. Take 2 Excalibur dehydrator trays with teflex sheets and place twenty rings onto the trays. Take a heaping spoon of the batter and place it on top of the apple rings. Top off with another apple ring. Sprinkle that with cinnamon and coconut flakes. Place into the dehydrator at 115 degrees for 8 hours. Remove from the dehydrator and place each on by hand onto a dehydrator tray without a teflex sheet. Sprinkle them with cinnamon and coconut. Continue dehydrating at 115 degrees for another 11 hours.

Makes around 20 mini rings.

Will last 5 to 7 days stored in an airtight container in the refrigerator.
