Peanut Butter Banana Icee

Ingredients:
1 32oz. coconut beverage (vegan, gluten free, unsweetened Trader Joe’s brand)
3 large ripe bananas
1 16oz. organic chunky peanut butter
1 tsp. cinnamon
3 tbsp. maple syrup

Directions:
Place the coconut beverage, bananas, ½ cup peanut butter, cinnamon, and maple syrup into a Vitamix. Blend for ½ minute until evenly mixed. Take a chopping block that will fit into your freezer. Place some decorative molds onto the chopping block. These molds can be candy molds, ice cube trays, bar molds, etc… Take the remaining peanut butter and a teaspoon. Place a drop of peanut butter into the bottom of each mold. Fill the rest of the mold with the mixture. Repeat the procedure one mold at a time until you run out of ingredients. Place the block with the molds into the freezer for 8 hours. Remove from the freezer. Remove from the molds. If they stick, use a little hot water on the bottom of the mold and they will pop right out.

Yields anywhere from 50 to 100 depending on the size of your molds.
